This week San Isidoro offers us a tasty dish from the Milanese rural tradition, often prepared for special occasions like the Christmas Eve or the local festivals: the Busecca.

A soup with tripe and beans, made even more inviting by tomatoes base which gives the typical bright red colour.

500 g tripe
1 l beef broth
2 carrots
2 celery stalks
4 garlic cloves
2 spoons of tomato sauce
250 g cannellini beans
1/2 glass of red wine
3 spoons of olive oil
30 g Parmesan

In a pan, fry lightly oil, carrot, garlic, onion and stalk chopped. When the gilding is completed, add the tomato sauce, the beans and the tripe cut into strips not too thin. Cooked for 30 minutes, adding occasionally the red wine. Add salt and pepper to taste. After this time, add the broth and cook for other 30 minutes. Serve the soup with parmesan cheese.
